The vineyards behind Fidèle are chosen for definition: old vines, naturally low yields, and dramatic soils that create structure, mineral drive, and length. In the cellar, the approach is restraint. We aim for depth without heaviness – wines that feel Mediterranean in generosity, but precise in balance. When Fidèle works, the finish carries that signature Roussillon “salt” and savory lift that makes you want another sip.
