Montsablé is our high-altitude Chardonnay and Pinot Noir project from the Haute Vallée de l’Aude: a cooler, finer-boned counterpoint to the Roussillon. We believe these plateaus and foothills near the Pyrénées are one of France’s best-value sources of serious Chardonnay and Pinot Noir – delivering freshness, tension, and aromatic lift without the high-price of more famous regions.

Montsablé embodies our philosophy: loyal to the land in site selection and respect for altitude, unbound by tradition in chasing a crisp, modern, food-friendly balance.

What makes this place special is balance. Cooler nights help preserve acidity, while sunny days build ripeness slowly. Clay-limestone soils contribute shape and length – giving wines that feel precise and gastronomic rather than heavy. This is the style we chase: clean lines, subtle complexity, and a finish that stays bright.
